A long-tail keyword is a specific, multi-word search phrase (for example "how to clean a stainless steel growler" rather than "growler"). Each gets fewer searches, but they are easier to rank for and the visitors have clearer intent.

Targeting many long-tail phrases is how newer sites win traffic before they can compete for broad terms.
